Outbreaks involving sprouts, peppers, eggs and other everyday foods make Salmonella seem unavoidable. Here’s why we are hearing so much about it, how dangerous it really is—and whether America’s shrinking food-safety system is leaving families more exposed.
Salmonella is having a busy summer.
The newest warning involves alfalfa sprouts. As of August 24, an outbreak involving Salmonella and multiple strains of E. coli had caused 55 illnesses across 15 states, including Florida, and four hospitalizations. Seven people were infected with Salmonella, while two were infected with both Salmonella and E. coli. Investigators linked the illnesses to sprouts sold under the Calco and Everything Sprouts brands. That warning follows a Salmonella outbreak linked to jalapeño peppers that caused 431 reported illnesses across 32 states and 57 hospitalizations. A separate outbreak involving shell eggs sickened 98 people and hospitalized 26, prompting the recall of nearly 1.6 million dozen eggs. CDC jalapeño investigation, CDC egg investigation
With numbers like those, it is easy to conclude that Salmonella is suddenly everywhere.
The more accurate answer is complicated. Salmonella infections are not rising dramatically in the national data, but they are not declining either. Meanwhile, America is importing more food, distributing it through increasingly complicated supply chains and asking a smaller, already strained federal workforce to monitor the system.
Is Salmonella Really Increasing?
According to the latest comparable national data, not dramatically.
The CDC found that Salmonella incidence in 2024 was statistically similar to its 2016–2018 level. A separate analysis covering 2004 through 2024 concluded that overall incidence remained stable. CDC FoodNet data, CDC diagnostic-testing analysis
That is not exactly reassuring. Salmonella infections are not soaring, but the country has made frustratingly little progress in reducing them.
We have also become better at finding infections. New diagnostic tests detect illnesses that older methods might have missed. Whole-genome sequencing lets public-health laboratories compare bacteria from patients in different states and connect cases to a common source.
Modern distribution magnifies every event. One contaminated shipment can reach numerous restaurants, grocery stores and manufacturers. If an ingredient is used in salads, salsas, sauces and prepared meals, one outbreak can generate multiple recalls and dozens of headlines.
Salmonella may be all over your news feed. That does not mean it is all over your refrigerator.
How Does Salmonella Get Into a Salad?
Salmonella is commonly associated with chicken and eggs, but it is not limited to animal products. Outbreaks have involved leafy greens, sprouts, tomatoes, peppers, melons, cucumbers, berries, flour, spices and nut butters.
The bacteria commonly live in the intestinal tracts of animals and people. They can reach produce through contaminated irrigation water, improperly treated manure, wildlife, livestock runoff, workers’ hands or harvesting and packing equipment.
Leafy greens and berries present an additional problem: we usually eat them raw. Chicken eventually reaches a hot pan, but lettuce and strawberries have no final cooking step to kill bacteria. Washing produce can reduce surface contamination, but it cannot eliminate bacteria that are firmly attached or have entered the food.
Fruit is a meaningful source of Salmonella illness. The latest federal analysis attributed approximately 14% of foodborne Salmonella illnesses to fruit, compared with 19% attributed to chicken and 13% to seeded vegetables such as tomatoes. CDC food-source analysis
Sprouts are especially troublesome. The warm, humid conditions needed to germinate seeds are also ideal for bacterial growth. Contamination can begin inside or on the seed, making it difficult to remove by washing.
How Dangerous Is Salmonella?
For most healthy people, Salmonella is miserable but temporary. Symptoms commonly include diarrhea, fever and stomach cramps. They generally begin six hours to six days after exposure and last four to seven days. Most people recover with fluids and rest.
But “most people recover” should not be confused with “Salmonella is harmless.”
The CDC’s latest burden estimates attribute approximately 1.28 million illnesses, 12,500 hospitalizations and 238 deaths annually to foodborne Salmonella. Children under five, adults 65 and older, infants and people with weakened immune systems have a greater risk of serious illness. Occasionally, the bacteria spread beyond the intestines into the bloodstream or other parts of the body. Antibiotic resistance can make those severe infections harder to treat.
The appropriate family response is alertness—not panic.
America’s Food-Safety Net Has Lost Capacity
Federal cutbacks did not create America’s Salmonella problem, and there is no proof that a particular layoff or canceled inspection caused the current pepper, egg or sprout outbreaks.
But it is no longer accurate to describe the effects of the cuts as merely hypothetical.
The FDA was already struggling. In January 2025, the Government Accountability Office reported that the agency had failed to meet domestic and foreign food-inspection targets since 2018. As of July 2024, only 432 investigators were responsible for domestic and foreign food inspections. Nearly one-quarter were eligible for retirement. GAO inspection report
Since then, FDA employment has fallen approximately 22% compared with 2024, according to agency data reviewed by Reuters. Foreign food-facility inspections also declined in 2025 while imports continued to grow. FDA says frontline inspectors were not eliminated and that it deploys personnel according to risk. But inspectors depend on travel coordinators, translators, laboratory specialists, data analysts and support employees. Cutting those positions can reduce inspection capacity even when credentialed inspectors remain. Reuters investigation
A recent CBS News analysis found that the Mexican facility connected to this summer’s Cyclospora outbreak had not been inspected by FDA in seven years. That gap began before the latest cuts, demonstrating that the system was already underfunded. The reductions made an existing weakness worse. CBS News investigation
Staff losses have also disrupted laboratory support. In 2025, FDA temporarily suspended a program that helped approximately 170 laboratories verify that they could accurately detect pathogens and contaminants. Routine food testing did not stop, but the interruption demonstrated that the reductions reached operational food-safety functions. Reuters laboratory report
Meanwhile, enforcement of the FDA’s enhanced Food Traceability Rule has been delayed until July 2028. FDA says the rule would allow contaminated products to be identified and removed more quickly. The USDA has also withdrawn a proposed rule that would have established enforceable limits for dangerous Salmonella strains in raw poultry while it considers a different approach. These decisions do not mean food will suddenly become unsafe everywhere. They increase the chance that facilities go longer between inspections, contamination remains undiscovered until people become sick and investigators need more time to trace a common ingredient. The likely result is not necessarily more individual recalls—it may be larger, longer and more confusing ones.

Families cannot inspect an irrigation system hundreds of miles away, but they can reduce risk at home.
- Check recalls by brand, package size, lot code and date—not merely by food category.
- Look for prepared foods containing a recalled ingredient, including salads, sandwiches, sauces, salsas and meal kits.
- Check the freezer during recalls. Freezing does not reliably kill Salmonella.
- Return or discard recalled food. Do not try to wash, cook or salvage it.
- Wash unpackaged produce under running water—never with soap or household cleaners.
- Products labeled “pre-washed” or “ready-to-eat” can be used without washing them again.
- Families with young children, older adults, pregnant women or immunocompromised members should avoid raw or lightly cooked sprouts.
- Keep produce and ready-to-eat foods separated from raw meat, poultry and eggs.
- Do not wash raw poultry. Splashing water can spread bacteria around the sink and countertop.
- Use a thermometer: cook poultry and leftovers to 165°F, ground meat to 160°F and whole cuts of meat to 145°F followed by a three-minute rest.
- Refrigerate berries, leafy greens, cut produce and other perishables promptly at 40°F or below.
- Wash hands after touching reptiles, backyard poultry, pet food, cages or animal habitats.
- Keep reptiles, poultry and animal-care supplies away from food-preparation areas.
Contact a healthcare provider for bloody diarrhea, fever above 102°F, vomiting or diarrhea lasting more than two days, inability to keep liquids down or signs of dehydration. Young children can become dehydrated particularly quickly.
Families can control handwashing, refrigeration, cross-contamination and cooking temperatures. They cannot inspect agricultural water, test an egg facility or reconstruct a national supply chain.
Food safety is both a household responsibility and a public system. Good kitchen habits matter—but they cannot replace inspectors, laboratories and effective traceback rules.
Salmonella is common. Panic is unnecessary. Prevention—and competent oversight—still matter.
