Recent outbreaks involving eggs, Romaine lettuce, jalapeños, berries, and other produce—and warnings involving reptiles kept as pets and contaminated pet food—make Salmonella seem unavoidable.. Here’s why we are hearing so much about it, how dangerous it really is and what families can do to protect themselves.
Salmonella is having a busy summer.
As of August 19, 2026, an outbreak linked to jalapeño peppers had caused 431 reported illnesses across 32 states and 57 hospitalizations. A separate outbreak prompted the recall of more than 1.5 million dozen shell eggs.
With numbers like those, it is easy to conclude that Salmonella is suddenly everywhere.
The more accurate answer is less alarming but still important: Salmonella has been with us for a long time, and the United States has made frustratingly little progress in reducing it. We have also become much better at finding outbreaks—and much faster at telling the public about them.
Is Salmonella Really Increasing?
According to the latest comparable national data, not dramatically.
The CDC’s preliminary 2024 FoodNet report found that the incidence of Salmonella infection was statistically similar to its 2016–2018 level. A separate CDC analysis covering 2004 through 2024 found that overall incidence remained relatively stable.
That is not exactly good news. Salmonella infections are not soaring, but neither are they declining as public-health officials would like.
What has increased is our ability to detect them. Newer diagnostic tests find infections that older methods might have missed. Whole-genome sequencing allows public-health laboratories to compare the genetic fingerprints of bacteria from patients in different states and determine that their illnesses probably came from the same source.
Modern distribution systems also magnify each event. One contaminated shipment can reach numerous restaurants, grocery stores and food manufacturers. If the ingredient is incorporated into salads, sauces and prepared meals, a single outbreak can generate multiple recalls and dozens of headlines.
Salmonella may be all over your news feed. That does not mean it is all over your refrigerator.
How Does Salmonella Get Into a Salad?
Salmonella is commonly associated with raw chicken and eggs, but it is not limited to animal products. Previous outbreaks have involved leafy greens, sprouts, tomatoes, melons, cucumbers, berries, nut butters, flour and spices.
The bacteria generally live in the intestinal tracts of animals and people. They can reach fruits and vegetables through contaminated irrigation water, improperly treated manure, wildlife, livestock runoff, workers’ hands or dirty harvesting and packing equipment.
Contamination can occur while produce is growing, during harvesting or inside a processing facility. Cutting and packaging can then spread bacteria from a small amount of contaminated produce into a much larger batch.
Leafy greens and berries have another disadvantage: we usually eat them raw. Chicken eventually reaches a hot pan or oven, but lettuce and strawberries have no final cooking step to kill bacteria.
Fruit is a meaningful source of Salmonella illness. The CDC’s most recent food-source analysis attributed approximately 14% of Salmonella illnesses to fruit. Leafy-green outbreaks also occur, although greens are frequently associated with E. coli and norovirus, while berries are often connected to hepatitis A, norovirus or Cyclospora. Not every produce recall is a Salmonella recall—but all demonstrate that “healthy” and “risk-free” are not the same thing.
How Dangerous Is It?
For most healthy people, Salmonella is miserable but temporary. Symptoms commonly include diarrhea, fever and stomach cramps. They usually begin six hours to six days after exposure and last four to seven days. Most people recover with fluids and rest and do not require antibiotics.
But “most people recover” should not be confused with “Salmonella is harmless.”
The CDC estimates that food-borne Salmonella causes approximately 1.28 million illnesses, 12,500 hospitalizations and 238 deaths during an average year. Death is rare, but Salmonella remains one of the most consequential food-borne infections in the country.
Children under five, adults 65 and older, infants and people with weakened immune systems face a greater risk of serious illness. Occasionally, the bacteria can spread beyond the intestines into the blood, joints or other parts of the body. Increasing antibiotic resistance can also make severe infections more difficult to treat.
The sensible family response is alertness—not panic.
Is America’s Food-Safety Net Getting Thinner?
Recent federal cutbacks deserve a place in this discussion, but they should not become an unsupported explanation for every outbreak.
There is currently no evidence that a particular FDA layoff or canceled inspection caused the jalapeño, egg or produce outbreaks. Contamination usually begins with conditions on a farm, in agricultural water or somewhere inside a processing and distribution system.
However, government oversight provides layers of protection intended to prevent contamination, discover it and remove affected food quickly. Those layers include inspections, laboratory testing, outbreak surveillance, genetic sequencing and supply-chain tracing.
Problems existed before the latest cuts. In January 2025, the Government Accountability Office reported that FDA had failed to meet domestic and foreign food-inspection targets since 2018. FDA identified limited workforce capacity as its primary challenge.
In March 2025, the Trump administration announced an HHS restructuring that, when combined with retirements and other departures, would reduce the department’s workforce from approximately 82,000 to 62,000 employees. HHS said critical services would be protected. Nevertheless, Reuters subsequently reported that staff losses forced FDA to suspend a quality-control program supporting approximately 170 food-testing laboratories.
Congress has also delayed enforcement of the FDA’s enhanced Food Traceability Rule until July 2028. The rule was designed to help investigators identify the source of contaminated food and remove it from stores more quickly.
Government cuts did not create America’s Salmonella problem. But fewer inspectors, laboratory specialists and outbreak-response personnel reduce the margin for error in a food system that was already struggling to meet its inspection goals. In plain language; it may be easier for the outbreaks that occur to slip thru the cracks or to identify the specific strain of bacteria but the cuts have not increased the occurrence of outbreaks.

You cannot control an irrigation system hundreds of miles away, but you can reduce the risk inside your home.
- Check recalls by brand, package size, lot code and date. Do not discard an entire category of food because one product was recalled.
- Look in the freezer during recalls. Freezing does not reliably kill Salmonella or other food-borne pathogens.
- Throw away or return recalled food. Do not attempt to wash, cook or otherwise rescue it.
- Wash unpackaged produce under running water—never with soap or household cleaners. Washing reduces bacteria but cannot eliminate all contamination.
- Produce marked “pre-washed” or “ready-to-eat” can be used without washing it again.
- Keep produce and ready-to-eat foods separated from raw meat, poultry and eggs.
- Do not wash raw poultry. Splashing water can spread bacteria around the sink, countertops and nearby food.
- Use a food thermometer: cook poultry and leftovers to 165°F, ground meat to 160°F and whole cuts of meat to 145°F followed by a three-minute rest.
- Refrigerate berries, leafy greens, cut produce and other perishables promptly at 40°F or below.
- Wash hands after touching reptiles, backyard poultry, pet food or animal habitats, and keep those animals and supplies away from food-preparation areas.
Contact a healthcare provider for bloody diarrhea, fever above 102°F, vomiting or diarrhea lasting more than two days, inability to keep liquids down or signs of dehydration. Young children can become dehydrated particularly quickly.
The goal is not to make families frightened of salad, eggs or the occasional bowl of berries. It is to understand where the real risks are, pay attention to specific recalls and turn frightening headlines into a handful of dependable habits.
Salmonella is common. Panic is unnecessary. Prevention still matters.
